This is a great appetizer. Beautiful as well as delicious.
4 Zucchinis or yellow squash cut lengthwise, and the seeds removed.
8-10 baby bella mushrooms, chopped
1/2 small sweet onion chopped
1 tsp sage, dried & powdered
2 tbsp grapeseed oil
Salt to taste
ground pepper to taste
1 cup shredded non-dairy cheese
Sautee the onions and mushrooms in the grapeseed oil till tender. Add the salt, sage and pepper. Spoon the mushroom mix into the zucchini boats. Add some cheese on top, and bale at 425 for 30 minutes or till the cheese starts to brown.
I usually add the seeds scooped from the zucchini to the mushroom mix.
