This is a simple and delicious recipe. The use of tomatillo adds a distinct flavor and makes it different from the usual mixed beans with tomatoes.
4 cups mixed beans - cooked
6 tomatillos, chopped
1 small sweet onion, chopped
2 tbsp olive oil
salt to taste
Cook dried beans - add 4 times the volume of beans to water and bring to boil. Simmer till soft and completely cooked. Sautee onions in olive oil till they start to brown. Add the tomatillos and salt. Cover and cook till tomatillos turn translucent. Add the cooked beans, adjust salt, and serve with bread.
An alternative to using tomatillos is to use green tomatoes.
