This quick starter is healthy, easy to make, and a favorite of everyone who tries it.
1 can organic black beans, drained and rinsed
1 can navy beans, drained and rinsed
1 package of frozen corn kernels, thawed
1 red bell pepper, diced
1/2 medium onion, chopped
Salt and pepper to taste
Combine the beans, chopped onions, diced bell pepper and corn. Add salt, pepper and the juice of one lemon. Taste and serve!
I prefer to use home made beans and fresh corn, but the idea behind this recipe is to make it under 10 minutes. For variations, add either : 1 bunch chopped cilantro, 1 bunch chopped mint, 1 bun ch chopped parsley. Also, note that you can use any beans you have on hand.
