Homemade Gnocchi with Spinach

An easy gnocchi and spinach recipe that can be eaten with crusty bread.

Ingredients:

  • 3 large Idaho potatoes, boiled, peeled and grated

  • 1 teaspoon salt

  • 1/4 teaspoon freshly ground pepper

  • 2 cups unbleached all-purpose flour

  • 1/2 cup water

  • 2 tbsp olive oil

  • 1 large onion, chopped fine

  • 4 cups white beans, cooked

  • 8 cups fresh spinach

  • 1 tbsp oregano

  • 2 tbsp basil

  • 1 can tomatoes, crushed

Steps:

To make the Gnocchi:

Combine the grated boiled potatoes, salt, and flour.  Knead, adding water if needed to make a dough consistency.  Roll the dough into 1/2 inch string, and cut into 1/5-inch pieces to make the Gnocchi.

To make the dish:

Heat olive oil in a saute pan. Add the chopped onions, cook till brown. Add crushed tomatoes, herbs and salt and pepper to taste.  Add the spinach, beans, and gnocchi.  Combine and cook on medium heat for about 5-6 minutes.

Notes:

I made extra dough and made dumplings the next day.  A short cut to take is to start with potato flakes - skipping the boiling, peeling, and grating of the potatoes.
