Vegan Broccoli "Cheese" soup

This is a great hearty soup that can be an entire meal.

This is a great hearty soup that can be an entire meal.

Ingredients:

  • 1 cups Yukon gold potatoes, chopped

  • 2 cups butternut squash, chopped

  • 1 sweet onion, chopped

  • 1/3 cup raw shelled pumpkin seeds, ground

  • 4 cups of water

  • 1 tbsp fresh lemon juice

  • 1/4 tsp ground turmeric

  • 2 tsp paprika

  • 1 tsp salt

  • dash of pepper

  • 1/4 cup nutritional yeast

  • 4 cups chopped broccoli florets

Steps:

Combine water, onions, potatoes, and squash and cook at high heat till boiling. Bring to simmer, and cook till the vegetables are soft, about 20 minutes.  Blend the cooked mixture and bring back to heat.  Add the remaining ingredients and mix them in.  Cook till the broccoli is cooked, about 5 minutes.

Notes:

I like my broccoli to be al-dante.
