Easy, light, and delicious cookies.
Ingredients:
1 cup unbleached wheat flour
1 cup coconut flour
1 tsp baking powder
1/4 teaspoon salt
1/4 cup non-dairy butter softened
1/4 cup water
1/2 cup sugar in the raw
1/3 cup orange marmalade
Steps:
Combine the flour, baking powder, salt. Add the butter, and combine till blended. Add water little at a time, till the dough comes together. make 1 inch balls, create a thumbprint, add orange marmalade. Bake at 350 for 20 minutes.
Notes:
You can make these cookies with almond flour instead of coconut. Also, vary the marmalade to any jam of your choice.
