Chinese style Vegan Fried Rice

I make Indian and Chines style fried rice. This one is my Chinese-inspired version.

Ingredients:

  • 4 cups cooked long-grain rice

  • 4 carrots, julienned

  • 1 small onion, sliced

  • 1 orange bell pepper, julienned

  • 4 cups broccoli, chopped into small pieces

  • 2 cups chopped mushrooms

  • 1 package of firm tofu, drained and cut into small cubes

  • 2 tablespoon soy sauce

  • 1 teaspoon honey or maple syrup

  • 1 tablespoon Korean hot sauce

  • 2-3 tablespoon grapeseed oil

Steps:

Sautee carrots in a wok on high heat. till tender  Add mushrooms and cook for 3-5 minutes.  Add the remaining vegetables, cover and cook for about 5 minutes.  Add the rice, soy, sweetener and hot sauce.  Toss till combined, cover and cook for a few more minutes.

Notes:

The hot sauce I used was Momofuku. (I know - Korean :-D)
