My scones are legendary! Not very sweet, very flaky, and vegan.
Ingredients:
3 3/4 cups of flour
1 1/2 tablespoon baking powder
1/2 teaspoon salt
1 stick (8 tablespoons) of vegan butter
1 cup dried cherries
1 cup vegan milk
1 cup of sugar
Steps:
Sift together flour & baking powder. Add the butter cut into bits, and blend till it resembles a coarse meal. Add the sugar, raising, and mix lightly. Add the vegan milk, and softly bind together. Do not over-knead or the scones will come out "bready". Shape in a round, flat dome, cut into 8 slices. Bake at 425 for 8-20 minutes.
Notes:
For the flour, I use unbleached variety. I use aluminium free baking powder and unbleached cane sugar. You can vary this recipe by replacing the cherries with raisins. I sometimes add nuts to my scones.
