This is my version of Indian-style fried rice. Vegetables and spices make it delicious.
4 cups long-grain brown rice, cooked
4-5 small tomatoes, chopped
2 small onions, sliced
1 bag green beans, trimmed and cut in half
3 tablespoon grapeseed oil
1 tablespoon turmeric
1 teaspoon gram masala
1 teaspoon red hot chili powder
salt to taste
1 bunch cilantro, chopped
Saute the chopped tomatoes in oil on high heat till all the liquid has evaporated, and the tomatoes start to brown. Add the onions, saute till translucent. Add the spices, rice, green beans, salt, mix, cover a cook for 5-6 minutes. Check for taste, adjust spices if needed. Add the chopped cilantro on top and serve.
The tomatoes should be "scalded" - i.e. cooked to almost caramelized. This adds a great flavor to the dish. Also, you can vary the veggies to suit your taste.
