Fresh and easy salad is good for any day.
4 Zucchini, spiraled
2 carrots, shredded using a peeler
1 lemon, juiced
1 cup almonds chopped
10 sprigs of cilantro, chopped
1-inch cube of ginger, grated
2 tablespoons extra virgin olive oil
Salt and pepper to taste
Toss all ingredients together and serve!!
The salad tastes better if you let it sit for about 10-15 minutes. It will not last for long, so best enjoyed fresh.
