This is an easy recipe and is a favorite in my house.
1 (12-ounce) package of soft tofu
½ cup soy milk
½ cup raw sugar
tablespoon vanilla extract
¼ cup maple syrup
1 (9-inch) prepared graham cracker crust
Preheat oven to 350 degrees F (175 degrees C). In a blender, combine the tofu, soy milk, sugar, vanilla extract and maple syrup. Blend until smooth and pour into pie crust. Bake at 350 degrees F (175 degrees C) for 30 minutes. Remove from oven and allow to cool; refrigerate until chilled.
You can vary the flavor by adding cocoa powder to make a chocolate cheese cake.
