Strawberry Tart

  • 1 1/2 cup flour

  • 10 tablespoons melted vegan butter

  • 2 tablespoons raw sugar

  • 20-25 strawberries, sliced

  • 1 package of silken tofu, drained

  • 2 tablespoon egg replacer

  • 1 lemon

  • 2 tablespoon strawberry preserve


For the crust:  Combine flour, melted butter and 1 tablespoon sugar.  Line a pie dish with the mixture, pressing down to form the pie shell.

For the filling:  combine tofu, egg replacer, rind and juice of one lemon into a smooth paste. Pout the mixture into the pie shell, and bake at 350 for 25 minutes.  Let cool.

Top with sliced strawberries and strawberry preserve and serve.


I baked the one in the picture with the strawberries in it.  This created a somewhat watery mess.  I re-made is without the strawberries, and added them after the baking, and the result was much better.
