Sausage Stuffed Zucchini

  • 6 Zucchini, sliced lengthwise, some pulp removed

  • 1 can Loma Lindo Chorizo

  • 1 bunch green onions, chopped

  • 2 tomatoes, chopped

  • 4-5 cloves garlic, minced

  • 1 cup Daiya Mozzarella shreds

  • 2 tablespoon olive oil

  • Salt and pepper to taste


Slice Zucchini lengthwise, scoop some of the pulp to form a shallow pocket.  In a frying pan, sautee chopped green onions and minced garlic. Add the tomatoes after the onions turn translucent.  Cook till tomatoes start drying.  Add the Loma Lindo Chorizo, salt and pepper.  Cook till blended and remove from heat, Spoon the sausage mix into the zucchini halves, top with Daiya mozzarella shreds.  Bake at 400 for 25 minutes.  


This is a great looking appetizer that tastes as good as it looks.  You can use any vegan suasage.  I have made it with Beyond Meat sausage.
