Lentil and walnut Loaf with tomato balsamic glaze

This is a great centerpiece dish for any family dinner or celebration.  Can be made gluten-free.

This is a great centerpiece dish for any family dinner or celebration.  Can be made gluten-free.

Ingredients for loaf:

  • 2 cups lentils, cooked

  • 1 cup walnuts, chopped

  • 1/2 onion, chopped

  • 1/2 cup mushrooms, chopped

  • 1/2 cup carrots, grated

  • 2 teaspoon basil

  • 2 teaspoon sage

  • 2 tablespoon avocado oil

  • 2 tablespoon flour (wheat or rice)

  • salt and pepper to taste

Steps:

Preheat oven to 425 degrees.  Combine all ingredients above.  The mixture should be dry, but a little sticky.  Add liquid or flour if needed to get the correct consistency.  Add to a loaf pan, pack by pressing down, and bake for 35 minutes, covered.  Let it sit for about 10 minutes, before removing from the loaf pan after baking.  Serve with the tomato balsamic glaze.

Ingredients for glaze:

  • 1 can organic tomato paste

  • 1/2 cup balsamic vinegar

  • 1/4 cup maple syrup

  • water if needed.

Steps:

Combine all ingredients, cook over high heat, stirring constantly, for about 5 minutes.  Note that this is not a reduction, so all we need is to combine the ingredients over heat.

Notes:

This is a tasty and hearty recipe, and shows well.  You can use canned lentils.  If cooking lentils from scratch, just use 1 cup of dried lentils and water, bring to boil, then simmer till done.
