Ingredients:

  • 1 cup bean sprouts

  •  1/2 cup carrots, grated

  • 1/4 cup fresh basil, julienned

  • 1/4 cup fresh cilantro, chopped

  •  12 rice paper spring roll wrappers

Steps:

Soak the rice paper wrapper in water for 5 seconds, one at a time.  Place bean sprouts, carrots, basil, and cilantro in the center, and wrap similat to a burrito. Serve with your favourite dipping sauce.

Notes:

The rice paper is very delicate, so it's important to work with one at a time.  I don't worry too much about how they look - they always tase delicious.  If one of them rips a bit, just use an additional wrapper to salvage it.
