Vegan Thai Curry

This is an easy version of curry, quick and uncomplicated.

Ingredients:

  • 1 yellow onion, finely chopped

  • 3 zucchini, chopped

  •  3 red peppers, chopped

  • 3 carrots, chopped

  •  1 pack tofu

  •  1 can tomato paste

  •  2 cups peanut butter

  •  1 can of coconut milk

  •  5 tablespoon curry powder

  • 5 tablespoon coconut oil

  • salt to taste

  • fresh coriander for garnish

Steps:

Sautee onions in coconut oil.  Add chopped carrots, cook for 2-3 minutes.  Add the chopped peppers.  Add the zucchini.  Keep stirring.  Add the curry powder, stir.  Add the tomato paste, coconut milk, and the peanut butter.  Add salt to taste and water if needed. Add in cubed tofu. Cook for a few more minutes, keeping the vegetables al-dante.  Serve over rice or quinoa, garnished with chopped cilantro.

Notes:

I saw a similar recipe on running on real food.  I think my version is simpler.  ou can vary the vegetables to your taste.
