Vegan Papaya Salad

This is my take on the Thai papaya salad. It's vegan and wonderful.

This is my take on the Thai papaya salad.  It's vegan and wonderful.

Ingredients:

  • 1 small papaya, grated

  • 2 tablespoons grated carrots

  • 6 green beans, julienned

  • 1 tomato, chopped

  • 5 cloves of garlic, chopped

  • 1 lemon

  • 1/4 cup chopped peanuts

  • 1/2 teaspoon chili flakes

  • salt to taste

Steps:

Mix together grated papaya, carrots, green beans, and tomato.  Add zest of the lemon, and the juice of the lemon.  Toss in garlic, peanuts, chili flakes and salt to taste, and server garnished with corriander.

Notes:

This is easy, quick, easy, healthy and delicious.
