A healthy, high-protein dish that is a perfect side or main dish.
1 bunch Escarole, chopped into 2-inch pieces
1 medium onion, sliced
2 cups black lentils, sprouted
2 tablespoon avocado oil
salt and pepper to taste
Sauté onions in oil on high heat, till translucent. Add the lentils, and cook for 2-4 minutes. Add the escarole, salt, pepper and cook till the leaves turn a brighter green. Remove from heat and serve.
Sprouted legumes are tasty and fun to cook with. In my case, I rinse and soak the lentils overnight, then drain and keep out of sun till they sprout. I keep them covered in water, changing the water each day. It took me 2 days to sprout.
