Escarole with Sprouted Black Lentil

Ingredients:

  • 1 bunch Escarole, chopped into 2-inch pieces

  • 1 medium onion, sliced

  • 2 cups black lentils, sprouted

  • 2 tablespoon avocado oil

  • salt and pepper to taste

Steps:

Sauté onions in oil on high heat, till translucent.  Add the lentils, and cook for 2-4 minutes.  Add the escarole, salt, pepper and cook till the leaves turn a brighter green.  Remove from heat and serve.

Notes:

Sprouted legumes are tasty and fun to cook with.  In my case, I rinse and soak the lentils overnight, then drain and keep out of sun till they sprout.  I keep them covered in water, changing the water each day.  It took me 2 days to sprout.
