An easy and delicious treat!
Ingredients:
2 cups cornmeal
1 cup wheat flour
1 tablespoon oil
1/2 cup red bell pepper, chopped
1/2 cup fresh corn
1/2 cup cilantro minced
salt to taste
water
Steps:
Add all ingredients except water. Add water, little at a time till you get a cake consistency. Pour the batter in a baking dish, bake for 25 minutes at 375. Serve with melted butter on top.
Notes:
This cornbread is yummy, but tends to be dry. I love it with a lot of melted butter and warmed.
