This is a great substitute for Crab cakes - only all vegan! A crowd-pleaser!
2 14 oz cans hearts of palm, roughly chopped
1 small onion, minced
1/4 cup veganaise
2 teaspoon old bay seasoning
2 teaspoon nori, ground to a powder
2 teaspoons spicy mustard
salt to taste
1 cup vegan bread crumbs
4 tablespoon oil
Combine all ingredients except oil and bread crumbs. Shape into loose patty similar to crab cakes. Coat in bread crumbs and pan fry on both side, till brown. Serve hot with spicy mustard.
These have fooled my non-vegan friends into thinking they are eating real crab cakes. The trick is to keep the hearts of palms seem like crab lumps. The nori adds the fishy flavor. The Bay Seasoning is what gives it the distinct Crab cake flavor.
