As a vegan, I consume a LOT of legumes. One of my recent purchases that I keep going back to is my Instant Pot. Here are just a few things I use mine for All beans (un-soaked, ready in less than 30 minutes), quinoa, rice (white and brown), soups, stews and more.
It comes with a recipe book that has a lot more recipes than I use it for, however, I still use it at least twice a week.
If you are just starting on your vegan journey, I highly recommend buying an instant pot.
